Coconut Cardamom Banana Bread

Fall is baking season! Let the sweet aromas of bubbling fruits and spice fill every kitchen. Ripe banana, toasted coconut, cinnamon and cardamom – you can’t go wrong.

Here’s what you’ll need:

  • 2 cups almond flour
  • ¾ tsp baking powder
  • ¾ tsp baking soda
  • Cinnamon – extra for top
  • Himalayan pink salt
  • Cardamom – extra for top
  • Shredded coconut – extra for  top
  • 2 very ripe bananas
  • 1 tsp vanilla extract
  • ⅛ cup Pure Maple Syrup

The steps to masterfully creating this piping hot bundle of happiness are straightforward and basic.

  1. Preheat oven to 350 degrees. Line loaf pan with parchment paper.
  2. Combine all dry ingredients: almond flour, baking powder, baking soda, salt, cinnamon, and cardamom.
  3. Mash two very ripe bananas (the riper your bananas, the sweeter your loaf) and add to the dry mixture. Add vanilla extract and maple syrup. Sprinkle in as much shredded coconut your heart desires and mix until evenly combined.
  4. Pour entire mixture into parchment lined loaf pan. Sprinkle extra cinnamon, cardamom, salt, and shredded coconut on top and pop into the oven. Bake for 45 minutes or until toothpick comes out clean.
  5. Let cool for 10 minutes.

Serve with ghee, nut butter, or greek yogurt and berries.
