Coconut Almond Granola

Crunchy, chewy, and just a touch of sweetness, Coconut Almond Granola is perfect as a topping or for a snack to munch on. It’s not overly sweet like most store-bought granola and its toasty, subtle flavor makes it easy to mix and match with yogurt and berries. Although if you’re like me, you’ll be lucky if you don’t just snatch it all off the cookie sheet while it’s still warm!

  • 2 cups steel cut oats
  • 1 cup sliced almonds
  • ½ cup shredded unsweetened coconut
  • 3 TBS coconut oil
  • ½ TBS cinnamon
  • 2-3 TBS honey
  • Pinch of sea salt

 

  1. Preheat oven to 350 degrees.
  2. Combine steel cut oats, sliced almonds, shredded unsweetened coconut and cinnamon in a medium-sized mixing bowl.
  3. Melt coconut oil and combine with dry ingredients.
  4. Add pure clover honey and combine until mixture is coated and sticking together.
  5. Line baking sheet with parchment paper. Spread granola onto parchment paper into a thin, even layer. Sprinkle with sea salt.
  6. Bake for 15 minutes.
