The Recharge & Replenish Salad

This salad is so delicious and so clean and I have my sister-in-law to thank! It’s quick and easy to throw together and you can make a lot of it – so it’s perfect for get-togethers or for weekly meal prep. Here’s what you will need:

  • Spinach (or other dark leafy green, although spinach holds up the longest in the fridge)
  • Cherry Tomatoes (I like the constellation cherry tomatoes)
  • 1 Cucumber
  • Kalamata Olives
  • Whole30 Vinaigrette (recipe below)
  1. Take your cucumber and, with a peeler, peel off the tough skin.
  2. Slice into thin circles. I then stack my cucumber slices into nice “pillars” and cut the stack into quarters.
  3. Rinse the tomatoes and cut them in half.
  4. Combine cucumbers and tomatoes into a large mixing bowl. Throw in some Kalamata olives and the spinach.
  5. Drizzle Whole30 Vinaigrette and toss to combine

Serve or keep in the fridge for 3-5 days.

 

All of these ingredients are packed with nutrients and water. After a weekend of parties and eating out, this is the perfect thing to make at the beginning of the week to recharge your body and replenish your skin. This salad is great for lunches throughout the week and an easy side dish to take to summer parties. It only takes a few minutes to throw together and now you’re guaranteed at least one option at the party that’s oh so, Naturally Tasteful.

Whole30 Vinaigrette

  • ⅛  cup Apple Cider Vinegar
  • ¼ cup olive oil
  • 1 tablespoon minced garlic
  • 1 teaspoon dijon or spicy mustard
  • Sea salt
  • Fresh Cracked Pepper
  • 2 TBSP lemon juice (or more to taste)
