These Almond Joy cookies are downright chewy soul food that are perfect for sharing at a backyard barbecue or – let’s be honest – hoarding while binge watching that new Netflix show. Either way, the Almond Joy cookie is a satisfying cross between cookie and brownie that keeps the sweet tooth happy without derailing all that hard-earned bikini body progress.
Almond Joy Cookies, also known as, The Best Paleo Cookie I’ve Ever Had
- 1 cup Almond Butter
- ½ cup pure maple syrup
- 1 egg
- ½ cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- Sea salt – to taste
- ½ cup chocolate nibs
- 1 cup shredded coconut
- ½ cup crushed almond pieces
- Preheat oven to 350 degrees.
- Combine almond butter and maple syrup until smooth.
- Add egg and mix until smooth.
- Add cocoa powder and mix until combined, smooth, and chocolatey.
- Pour ½ cup of almonds into a plastic baggie and smooth out to make one layer. Then, use a rolling pin to crush the almonds into irregular pieces.
- Mix in baking soda, vanilla extract, sea salt, chocolate nibs, shredded coconut, and crushed almond pieces until well incorporated into the batter.
- Place medium-sized dollops (about 2 tablespoons of dough) onto a baking sheet lined with parchment paper.
- Slide baking sheet into the oven and bake for 10 minutes.
- Remove from oven and allow to cool for 10 minutes.
