Almond Joy Cookies

A little sweet, a little salty, a lot delicious! These Almond Joy cookies are downright chewy soul food that are perfect for sharing at a backyard barbecue or – let’s be honest – hoarding while binge watching that new Netflix show. Either way, the Almond Joy cookie is a satisfying cross between cookie and brownie that keeps the sweet tooth happy without derailing all that hard-earned bikini body progress.

Almond Joy Cookies, also known as, The Best Paleo Cookie I’ve Ever Had

  • 1 cup Almond Butter
  • ½ cup pure maple syrup
  • 1 egg
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • Sea salt – to taste
  • ½ cup chocolate nibs
  • 1  cup shredded coconut
  • ½ cup crushed almond pieces

 

  1. Preheat oven to 350 degrees.
  2. Combine almond butter and maple syrup until smooth.
  3. Add egg and mix until smooth.
  4. Add cocoa powder and mix until combined, smooth, and chocolatey.
  5. Pour ½ cup of almonds into a plastic baggie and smooth out to make one layer. Then, use a rolling pin to crush the almonds into irregular pieces.
  6. Mix in baking soda, vanilla extract, sea salt, chocolate nibs, shredded coconut, and crushed almond pieces until well incorporated into the batter.
  7. Place medium-sized dollops (about 2 tablespoons of dough) onto a baking sheet lined with parchment paper.
  8. Slide baking sheet into the oven and bake for 10 minutes.
  9. Remove from oven and allow to cool for 10 minutes.
